Sumatra is a large Indonesian island west of Java and south of the Malay Peninsula, is known for its rugged tropical terrain, wildlife, and smoldering volcanoes. The wet-hulled process, or Giling Basah, is a processing method that was developed in the 1970’s when the Japanese coffee industry developed an interest in this origin. This speeds up the drying process in an otherwise very rainy and humid environment but also results in a greenish-blue hue and unmistakable flavor.
